The easiest recipe ever for Oven Roasted Red Potatoes! These baby reds come out tender in the middle and oh-so-crispy on the outside, every time. Seasoned with garlic and tossed at the end with a bit of white wine vinegar, the flavor is irresistible. The perfect side dish for so many dinners, but I also love to serve these as an appetizer with a variety of dips! Everybody loves them!

SEAFOOD STUFFED POTATOES RECIPE

When I was about 9, there was this local seafood restaurant my family and I would frequent. Don’t worry. You know I’m not a typical blogger so this lil story will be brief. Anyway, the restaurant was called Louisiana Gold. There has never been a more appropriately named establishment. This place was indeed golden! The always had the freshest, Louisiana seafood. They made home style burgers, po boys, and perfectly seasoned boiled seafood. But, they were most famously known for their seafood stuffed potatoes. And boy were they OVER stuffed! Each potato was flowing with shrimp, crawfish, and that spicy cheese sauce. Man! Louisiana Gold unfortunately closed many years ago. I miss that place. Volcano Potatoes

Here is an interesting new way to cook potatoes. These are Volcano Potatoes. I parbaked potatoes, hollowed them out, stuffed them, wrapped them in bacon, and grilled them. And, while I didn’t picture the sauce, it’s pretty good too. Enjoy!
