After the 4th of July celebrations earlier in the week we thought it would be best to create something “healthy” and refreshing to help our bodies recover. The cocktail today concentrates on the flavors of fresh fruit to trick your body into forgetting about the awesome booziness inside. The watermelon is so refreshing; it also pairs extremely well with the tequila, while not completely overpowering the delicious earthy tones found in the Añejo we used.

Tuna Tartare in Miso Cones

This Wolfgang Puck original (via YumSugar) features fresh tuna marinated in spicy wasabi, ginger, soy sauce and a splash of citrus. The miso cones, while daunting to make at first glance, are assembled like tiny masterpieces in a matter of minutes. Enjoy this recipe as an appetizer or feature it as an entree. And a hint about assembling the cones: I found it easiest to only bake three at a time as they harden very quickly and must be shaped immediately after they’re taken out of the oven.

Berry and cream cheese croissant french toast bake

There’s no better way to serve French toast than this Berry and Cream Cheese Croissant French Toast Bake. Not only is this french toast incredibly easy, it’s also better than any other french toast you’ve ever had. Soft, buttery, flaky croissants layered with sweet fruit jam and extra creamy, cream cheese. Then baked in an eggy french toast “batter”. It’s the perfect (make ahead) brunch entrée for both spring and summer, and super pretty when topped with fresh berries. No one will pass up this french toast!
