If you follow me on snapchat (@minimalistbaker), you know I’ve been trying to make vegan pepperoni for a while now. It’s been one of those recipes I dreamed up and then struggled to perfect. But, after many failed attempts, I’m happy to report I cracked the code!
This vegan butter burger is absolutely delicious. It can be made as greasy, gooey, cheesy comfort food … there’s also a healthier option without butter or oil and it’s still delicious. Both versions are simple to make using commonly available ingredients.
People often ask Ashlee and I if transitioning to a vegan diet was hard, and to be frank, it really wasn’t. Obviously, the first couple of weeks of transitioning was a bit rocky, but all in all, it was fairly easy for us.
