Crispy Fajita Fish Tacos
These tacos are a delicious twist on the traditional Baja fish tacos. Enjoy!

Ingredients
- For the slaw:
- 1 cup mixed sliced peppers
- ¼ head white cabbage finely sliced
- ¼ head purple cabbage finely sliced
- 1 red onion, finely sliced
- juice of 1 orange
- Juice of 1 lime
- Salt and pepper to taste
- ¼ cup chopped cilantro
- 2 tbsp oil
- Crema:
- 1 cup sour cream
- 2 tsp lime juice
- 1 garlic clove, minced
- Salt and pepper to taste
- 4 cod fillets cut into short strips
- 3 tbsp fajita seasoning
- 1 bottle beer
- Oil for frying
- Corn Tortillas
- Extra Cilantro for garnish
Instructions
- Mix together all slaw ingredients and keep chilled.
- Mix together the cream ingredients and keep chilled.
- Heat oil to 175ºC.
- Whisk together flour, fajita seasoning and beer until smooth. Add a up to ½ a beer more if batter is too thick.
- Dip each piece of fish and gently drop into the oil. Swing it back and forth to prevent it from sticking to the bottom.
- Cook until golden brown.
- Add fish to tortillas, top with slaw and drizzle with cream and some fresh coriander.
- Serve immediately, enjoy!
