Buffalo Chicken Grilled Cheese Sandwich With Buttermilk Ranch + Blue Cheese
There's nothing quite like crispy pieces of fried chicken tossed in a rich and spicy Buffalo sauce. Add melted cheese, ranch, and crispy, buttery bread to the equation and the results are even more swoon-worthy. You could also try making a buffalo chicken mac and cheese to top your sandwiches instead if you're really looking to spice things up.

Ingredients
  • For The Buffalo Sauce:
  • ½ cup Frank's Red Hot Sauce
  • ½ cup (8 tablespoons) unsalted butter
  • 1 tablespoon white vinegar
  • 1 dash cayenne
  • 1 dash garlic powder
  • 1 dash celery salt
  • 2 dashes Worcestershire sauce
  • For The Sandwich:
  • 2 thick slices French bread
  • ½ cup shredded sharp cheddar cheese
  • ½ cup chicken fingers, coarsely chopped
  • 1 tablespoon buttermilk ranch dressing
  • 1 tablespoon buffalo sauce
  • 1 tablespoon crumbled blue cheese
  • ¼ teaspoon finely sliced chives
  • 2 tablespoons salted butter
Instructions
  1. FOR THE SAUCE
  2. Add the Frank's Hot Sauce, unsalted butter, white vinegar, cayenne, garlic powder, celery salt and Worcestershire sauce to a medium sized pot.
  3. Turn the heat to medium and let the mixture simmer for 10-20 minutes or until the sauce is smooth.
  4. Season with salt to taste and remove from heat when the desired consistency is reached.
  5. Reserve 1 tbsp for this recipe and store the remaining sauce in an airtight container in the refrigerator.
  6. FOR THE SANDWICH
  7. Begin by placing half the cheddar cheese onto one slice of bread. Top the cheese with the chopped fried chicken and drizzle it with Buffalo sauce and ranch dressing.
  8. Add the blue cheese and the chives on top and then add the remaining cheese. Place the remaining piece of bread on top and butter the exterior of the sandwich.
  9. In a medium sized cast iron pan or in a panini press, add the buttered sandwich and turn the heat to medium.
  10. Let the sandwich cook on each side, flipping if necessary, until the bread has crisped up and all the cheese has melted. Once the sandwich is done cooking, remove it from heat, let it sit for 1 minute, and then slice. Serve immediately with an extra side of buffalo sauce for dipping.
