Halloween {Meatloaf} Recipe
Meatloaf? How about some FEETloaf?! Perfect for Halloween and anytime really, we have altered Paul’s famous meatloaf recipe for a special Halloween treat, per our 7 year old’s request.

Ingredients
  • 1 lb. ground sausage
  • 2 lb. ground turkey or beef
  • ½ sleeve of crumbled up saltine crackers
  • ¼ cup Italian style breadcrumbs
  • ¼ cup oatmeal
  • 1 packet Lipton onion soup and dip mix
  • 1 Tablespoon Worcestershire sauce
  • 1 Tablespoon minced garlic
  • ⅔ cup Frozen Peas
  • 2 eggs
  • 1 large vine ripened tomato
  • Ketchup
  • Pepper (to taste)
  • Cavender’s All Purpose Greek Seasoning (optional seasoning for potatoes)
  • Rosemary (for potatoes)
  • Salt & Pepper to taste
Instructions
  1. Preheat oven to 375 degrees. Thoroughly mix all ingredients together in a large mixing bowl, minus the the tomato and ketchup.
  2. FOR REGULAR LOAF:
  3. Form into loaf shape in center of baking dish. Make 3-5 finger impressions (about ¾ deep into the loaf) down the center. Fill holes with ketchup. Add desired amount of ketchup on top of the loaf. Slice up large tomato and lay slices across the top. Sprinkle with pepper. Fill in sides of baking dish with cubed potatoes. Add salt, pepper and rosemary then lightly drizzle with olive oil.
  4. FOR FEETLOAF:
  5. Separate meat mixture into two equal parts. Drizzle a small amount of oil on bottom of a large glass baking dish. Line the dish with enough potatoes to line the bottom of the baking dish with cubed potatoes. Season the potatoes with salt, pepper and rosemary. Form each part into a rough feet-like shape and lay on top of potatoes. Finish forming the “feet” and use a knife to delineate the toes, and an onion for toenails. At the top of the “ankle” make one finger impression, full with ketchup and place your tomato slices. If you’d like to add a bone (as the “ankle”) insert a mushroom stem or a piece of potato. Add ketchup on top for “blood”.
  6. FOR EITHER STYLE OF MEATLOAF:
  7. Bake uncovered at 375 degrees for about 45 minutes (two smaller loaves) or 60 minutes (one large loaf) . Enjoy!
