Striped Cream Soda Parfait

Striped Cream Soda Parfait
  • 1 cup vanilla ice cream, plus more to serve
  • 4 teaspoons gelatin, divided
  • 2 tablespoons hot water, divided
  • 2 cups Japanese cider
  • Blue Hawaii syrup
  • Cherries
  • Whipped cream
  • Mint leaves
  • Colored tapioca
  1. In two small bowls, add 2 teaspoons gelatin to each bowl.
  2. Pour 1 tablespoon hot water into each and stir to dissolve.
  3. In a saucepan, add vanilla ice cream and heat until melted.
  4. Add 1 bowl of gelatin and stir to combine.
  5. In a mixing bowl, add cider, Blue Hawaii syrup and remaining gelatin. Stir to combine.
  6. Pour a layer of the cider mixture into a glass and place in fridge to set.
  7. Pour some of the ice cream mixture on top and place in fridge to set.
  8. Repeat this process, creating a striped pattern.
  9. Garnish with vanilla ice cream, whipped cream, a cherry and colored tapioca.
