Polenta Fries
Polenta fries will make you forget all about French fries.

  • FOR FRIES
  • 1 tube (18-oz.) prepared polenta
  • 2 tbsp. extra-virgin olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 2 tbsp. shredded Parmesan, for serving
  • Freshly chopped parsley, for garnish
  • FOR SAUCES
  • ¼ c. mayonnaise
  • ¼ tsp. garlic powder
  • 1 tsp. fresh lemon juice
  • 1 tsp. finely chopped fresh parsley
  • ½ tsp. Dijon mustard
  • ¼ c. ketchup
Instructions
  1. Preheat oven to 450°. Cut polenta in half crosswise. Cut each half into ½-inch thick planks. Cut each plank into four ½-inch fries.
  2. Place polenta wedges on a rimmed baking sheet, drizzle with oil, and season with salt and pepper. Turn gently to coat with oil and arrange in a single layer.
  3. Bake, turning halfway through, until golden and crisp, about 40 minutes.
  4. Meanwhile, in a small bowl, stir together mayonnaise, garlic, lemon juice, parsley and mustard. Season with salt and pepper.
  5. Transfer cooked fries to a serving platter. Sprinkle with parmesan cheese and parsley and serve with ketchup and garlic mayo.
