Ingredients
2 tbsp. butter
3 large eggs
¾ c. whole milk
¾ c. all-purpose flour
¼ c. granulated sugar
1 tsp. pure vanilla extract
¼ tsp. kosher salt
½ lemon, for serving
Fresh berries, for serving
Powdered sugar, for serving
Instructions
Preheat oven to 425°. Heat a large cast iron skillet in the oven until very hot, about 5 minutes. Remove from oven and carefully add butter, tilting skillet to coat the bottom and sides.
In a blender, combine eggs, milk, flour, granulated sugar, vanilla, and salt. Blend until foamy, about 1 minute.
Pour batter into hot skillet and bake until pancake is puffed and deeply golden, about 20 minutes.
Sprinkle with a squeeze of lemon juice, top with berries, and dust with powdered sugar. Serve immediately.
