Mac & Cheese Jalapeño Poppers

Mac & Cheese Jalapeño Poppers are the mashup we never knew we needed.
Ingredients
  • 1 (7.25-oz.) package store-bought macaroni and cheese, plus ingredients on box
  • ¾ c. shredded cheddar cheese
  • ¾ c. shredded Monterey jack cheese
  • 10 jalapeños
  • 4 slices cooked bacon, crumbled
  • 2 green onions, thinly sliced
Instructions
  1. Preheat oven to 400°. In a medium saucepan, cook mac and cheese according to package instructions. Remove from heat and scrape into a medium heatproof bowl. Let cool 5 minutes. Stir in cheddar and monterey jack until evenly distributed, but not melted.
  2. Halve jalapeños lengthwise, then use a spoon to remove seeds and veins. Fill with mac and cheese.
  3. Place on a baking sheet and bake until peppers are tender, about 20 minutes. Sprinkle the cooked bacon over top, sprinkle with green onions, and serve warm.
