Dragon Fruit Mojito
While in Thailand, we discovered lots of new foods. From unique vegetables like baby eggplants to crazy new spices and herbs. But one of the most colorful and prettiest things we discovered were dragon fruit. They’re also known as pitayas. Sure I’ve seen them before here and there, but who would ever think to grab one? Not me! These pretty fruits adorned with little black seeds in the perfect white flesh were at every single breakfast we had.

Ingredients
  • 2 ounces of light rum
  • ½ ounce of lime juice or you can always just throw in a couple of slices of lime
  • 2-3 tbsp of diced dragon fruit
  • ½ ounce of simple syrup
  • 5-7 mint sprigs torn
  • splash of soda water
Instructions
  1. Start with your cocktail shaker and add in your fruit, mint, lime and simple syrup. Muddle the heck out these!
  2. Add ice and rum. Then shake it like crazy
  3. Take the entire lid off the shaker and pour the mixture into a glass.
  4. Top with extra ice if you need it
  5. Top with a splash of soda water
  6. Garnish with a slice of dragon fruit
