Slow Cooker Rice Pudding
Rice pudding is one of our favourite desserts ever, and this slow cooker version is epically creamy!
Recipe type: Dessert
  • 25 g unsalted butter
  • 125 g pudding rice
  • 900 ml whole milk
  • 300 ml double cream
  • 35 g caster sugar
  • 1 tsp. vanilla extract
  • ½ tsp. ground cinnamon
  1. Rub the butter around the bowl of the slow cooker then add all ingredients and stir to combine.
  2. Cook on high for 3½ hours, stirring every 30 mins, until liquid is absorbed and rice is tender and creamy.
  3. Serve either with a dollop of strawberry jam, chopped dried fruit, a drizzle of honey and chopped nuts, or a grating of nutmeg.
