Mozzarella Garlic Bread Dippers with Tomato Soup Dip

Ingredients
  • 2 tbsp olive oil
  • 2 cloves garlic, crushed
  • 1 large onion, finely chopped
  • 600g passata
  • 1 tbsp oregano
  • 1 tbsp salt
  • Pepper, to taste
  • 1 tbsp butter
  • 100ml double cream
  • 200g softened butter
  • Handful parsley, finely chopped
  • 2 cloves garlic, crushed
  • ¼ tsp pepper
  • ½ tsp salt
  • ½ cup flour
  • ½ cup water
  • 2 loaves white bread
  • 2 packs mozzarella
Instructions
  1. Heat the oil in a medium sized saucepan and gently fry the garlic until aromatic. Add the onion and cook until soft, then add passata and simmer until thick. Add oregano, salt and pepper and blend until really smooth, then stir in the butter and cream. Set aside.
  2. Meanwhile, mix together the softened butter with the parsley, garlic and season to taste.
  3. Mix together the flour and water and start making the dippers - cut circles from the bread and smaller ones from the mozzarella, then brush the insides with the paste and stick two circles of bread together with mozzarella inside. Brush with the garlic butter.
  4. Lay all the dippers on a large tray and a smaller tin in the middle - pour the tomato soup into this central tin and top with more grated mozzarella.
  5. Bake until the dippers have gone all golden and the soupy dip has bubbled up.
