Hot Reuben Dip

Hot Reuben Dip
Serve with celery sticks, cauliflower florets and rye mini toasts for a snack that could double as a meal.

Ingredients
  • 1 (8-oz.) block cream cheese, softened
  • ½ c. Russian (or Thousand Island) dressing
  • 1¼ c. shredded Swiss cheese, divided
  • 1 c. chopped corned beef, divided
  • 1 c. sauerkraut, drained
  • Freshly ground black pepper
  • Freshly chopped parsley, for garnish
  • Bagel chips, for serving
Instructions
  1. Preheat oven to 350°. In a medium bowl, stir together cream cheese and Russian dressing until combined, then fold in 1 cup of Swiss, almost all the corned beef, and sauerkraut and season with pepper.
  2. Transfer dip to a small baking dish and top with remaining ¼ cup Swiss and corned beef. Bake until golden and bubbly, 18 to 20 minutes.
  3. Garnish with parsley and serve with bagel chips.
