Firecracker Chicken Meatballs
These will REALLY spice up your 4th of July.

Ingredients
  • FOR THE MEATBALLS
  • 1 lb. ground chicken
  • ½ c. panko bread crumbs
  • ¼ c. chopped chives, divided
  • 2 cloves garlic, minced
  • 1 egg
  • Kosher salt
  • Pinch cayenne pepper
  • 1 tbsp. vegetable oil, for frying
  • FOR SAUCE
  • ½ c. hot sauce (such as Frank's)
  • ¼ c. lightly packed brown sugar
  • 2 tbsp. apple cider vinegar
  • Kosher salt
  • Red pepper flakes
Instructions
  1. Form meatballs: In a large bowl, mix together ground chicken, panko bread crumbs, 2 tablespoons chives, garlic, and egg. Season mixture with salt and pepper, then form into small balls about the size of golf balls.
  2. Make sauce: In a medium bowl, whisk together hot sauce, brown sugar, and apple cider vinegar. Season with salt and red pepper flakes.
  3. In a large skillet over medium heat, heat vegetable oil. Add meatballs in a single layer and cook until seared all over, 3 to 4 minutes per side. Add sauce and bring to simmer. Simmer until sauce has thickened slightly and meatballs are cooked through, about 10 minutes.
  4. Garnish with remaining 2 tablespoons chives and serve warm.
