Crispy Fajita Fish Tacos
These tacos are a delicious twist on the traditional Baja fish tacos. Enjoy!

Ingredients
  • For the slaw:
  • 1 cup mixed sliced peppers
  • ¼ head white cabbage finely sliced
  • ¼ head purple cabbage finely sliced
  • 1 red onion, finely sliced
  • juice of 1 orange
  • Juice of 1 lime
  • Salt and pepper to taste
  • ¼ cup chopped cilantro
  • 2 tbsp oil
  • Crema:

  • 1 cup sour cream
  • 2 tsp lime juice
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 4 cod fillets cut into short strips
  • 3 tbsp fajita seasoning
  • 1 bottle beer
  • Oil for frying
  • Corn Tortillas
  • Extra Cilantro for garnish
Instructions
  1. Mix together all slaw ingredients and keep chilled.
  2. Mix together the cream ingredients and keep chilled.
  3. Heat oil to 175ºC.
  4. Whisk together flour, fajita seasoning and beer until smooth. Add a up to ½ a beer more if batter is too thick.
  5. Dip each piece of fish and gently drop into the oil. Swing it back and forth to prevent it from sticking to the bottom.
  6. Cook until golden brown.
  7. Add fish to tortillas, top with slaw and drizzle with cream and some fresh coriander.
  8. Serve immediately, enjoy!
